The 55°F number you see everywhere as the "ideal" wine storage temperature is a number that gets repeated more often than it gets explained. This is the reference for what happens to wine at different temperatures, why 55°F became the default, and what range you can actually work within.
The short answer
Store wine between 50°F and 59°F if you can. Stable matters more than precise. Wine aging steadily at 62°F will outlast wine that swings between 50°F and 68°F twice a year.
That's the whole answer. The rest of this article explains why.
Why 55°F
The 55°F figure traces to traditional European cellar conditions. Bordeaux, Burgundy, and Piedmont cellars, dug into limestone or clay below frost line, sit naturally in the 53°F to 57°F range year-round. Wine has been aged under those conditions for centuries, and modern aging science treats them as the benchmark because the outcomes are known and reproducible.
Chemical reactions in wine roughly double in rate for every 18°F (10°C) of temperature increase. A bottle aged at 73°F evolves about twice as fast as the same bottle at 55°F. Sometimes that's wanted (faster maturation of a young tannic wine). Usually it's not, because faster aging is less complex aging.
What happens at each temperature range
Below 40°F
Wine doesn't freeze until about 18°F to 25°F depending on alcohol content, but storage in the 30s is too cold for aging. Aging effectively stops below 50°F: the wine sits in stasis rather than evolving. For long-term storage this is not harmful (cold cellaring is a known practice for some Burgundies). For most collectors it's pointless. The wine isn't improving.
40°F to 49°F
Aging is very slow but does happen. This range is below the storage sweet spot but above the stasis line. Acceptable for long-term holding of wines you're not in a hurry to drink. White wines and Champagnes can sit here for years without issue.
50°F to 59°F: the storage zone
This is the target. All wine ages predictably and well in this range. Red and white wine can share this zone without issue. Sparkling wine is happy here too. Most cellar cooling systems aim for the middle of this band, around 55°F, and hold it within plus or minus two degrees.
60°F to 64°F
Slightly warm, slightly accelerated aging. Wine will still age well but somewhat faster than ideal. For bottles you plan to drink within five to ten years, this range is fine. For bottles you plan to age twenty years, it's marginal: the wine will reach its peak earlier and stay at peak for less time.
65°F to 70°F
Noticeably warm. Aging is faster, and the developmental window narrows. Bottles in this range for years rather than months will show accelerated aging. The wine isn't ruined, but it's not what the winemaker intended.
71°F to 79°F
Hot. Damage accumulates here over months. Tannic young reds may handle this for a year or two without obvious harm. Delicate whites and Champagnes lose their freshness faster. Long-term storage in this range produces wines that taste cooked: stewed fruit, muted aromatics, dull finish.
80°F and above
Heat damage is fast. A weekend at 85°F won't ruin a bottle, but a summer in a hot garage will. The cork seal can also fail: when wine inside the bottle expands faster than the cork can contain, it pushes wine past the cork and air pulls in as the bottle cools. This is irreversible and the wine is permanently compromised.
Swing matters more than absolute temperature
This is the part most storage advice underweights. A wine cellar held steady at 62°F will outperform a cellar that swings between 50°F and 68°F twice a year, even though the average temperature is the same.
The reason is the cork. Wine expands and contracts with temperature changes. Each cycle pushes a small amount of wine past the cork seal on the warm side, and pulls a small amount of air in on the cool side. Over years, cumulative cycles oxidize the wine even if the temperature never reaches a dangerous absolute level.
This is why a wine fridge that holds 55°F plus or minus one degree outperforms an unconditioned basement that averages 55°F but swings between 45°F in February and 65°F in August.
Serving temperature is different from storage temperature
The 55°F storage number gets confused with serving temperature, which is wine-style-dependent:
- Sparkling wines and Champagnes: 40°F to 50°F
- Light whites (Sauvignon Blanc, Pinot Grigio, Riesling): 45°F to 50°F
- Full whites (Chardonnay, white Burgundy): 50°F to 55°F
- Rosé and light reds (Beaujolais, Pinot Noir): 55°F to 60°F
- Medium reds (Merlot, Sangiovese, Tempranillo): 60°F to 65°F
- Full reds (Cabernet Sauvignon, Syrah, Bordeaux blends, Barolo): 60°F to 68°F
- Fortified wines (Port, Madeira, Sherry): 55°F to 65°F

Humidity, light, and vibration belong in this conversation
Temperature is the dominant variable but not the only one. Wine stored at the right temperature can still be damaged by:
- Low humidity drying the cork and letting air in. Aim for 50% to 75% relative humidity. Our cellar humidity guide covers this in depth.
- UV light degrading wine through clear glass over months. Storage in darkness or in tinted bottles solves this.
- Constant vibration from compressors, traffic, or appliances disturbing sediment. Most wine fridges are designed to minimize vibration; ambient storage near washing machines or refrigerators is not.
Practical targets
For most collectors most of the time:
- Hold the cellar between 53°F and 57°F
- Allow drift of plus or minus two degrees, not more
- Keep humidity between 55% and 70%
- Keep the cellar dark and quiet
If you can hold those four variables, the wine is in good hands. If you can hold three of the four, the wine is fine. Only when all four start to slip does damage accumulate.
